Beets Roasted with Dill

Beets roasted on a bed of fresh dill

Baking the beets on top of fresh dill gives the beets a subtle dill flavor. I think the dish is prettier before cooking, since the dill turns dark and brittle durring the roasting.

Beets Roasted with Dill Ingredients:
Beets, peeled, and cubed
dill sprigs
olive oil
salt and pepper

Directions:
Toss beets with olive oil, salt and pepper. Select a baking dish large enough for the beets to be spread out in a single layer. Line the bottom of the dish with dill. Spread the beets on top. Place in an oven set to 400 degrees, no need to preheat. Bake until the beets are tender. Remove the dill before serving,
